The long San Marzano tomatoes variety is grow and coltivated in April and May in Apulia, and harvested manually by hand in july and august.
After the harvest they are washed, cut, placed on drying frames outdoor, salted and left under the sun for 4-5 days. Then there is a new selection and a new wash with water and vinegar. They are flavored with spices and invaded in oil.
You can eat them with bruschetta for aperitif, on the pizza or to match first dishes.
